Caramel Cookies

Last year I won several ribbons at the fair (for cookies), including one grand champion! I may try this year with this-- unless someone reads this and gets there first!

Caramel Cookies

1 cup butter
1 1/4 cups brown sugar
2 eggs
1 tsp. pure vanilla extract
2 ½ cups unbleached flour
1 tsp. Baking soda
¼ tsp. Salt
1 bag a mini Heath Bars, unwrapped and smashed : )


1. Place Heath Bars in a food processor. Process until they are in coarse pieces and place half of them in a small bowl. Process the remaining pieces until they become a fine powder.
2. Cream the butter and sugar. Add eggs, one at a time, then vanilla.
Sift dry ingredients, then add slowly to the creamed mixture until everything is incorporated. Add the Heath Bar pieces. Chill for one hour.
3. Make balls with the dough- use a 2” ice cream scoop to make them uniform. Roll in the Heath Bar powder and bake at 375 for 10-12 minutes.
