No, there's no egg in it and if you Google the history of the egg cream, you wlll find many explanations for the etymology of the term.
Basically it is an ice cream soda without the scoop of ice cream. When I worked at Grunings they were my favorite refreshment-- sometimes I even drank one in place of a meal.
Begin by procuring heavy cream or whipping cream, seltzer and syrup. For a chocolate egg cream use good chocolate syrup (Bosco works). At Grunings we made vanilla, strawberry and pineapple egg creams, but there is no end to the possibilities.
Pour a generous amount of syrup into the bottom of a glass (about a 1/4 cup). Add an equal amount of cream and stir while you add enough of the seltzer to fill the glass. Make sure the seltzer is COLD before you start. Stick a straw in and enjoy!
