I made some fresh gazpacho for lunch today- and experimented a little. I have done this before and feel like I am moving towards gazpacho perfection!
Start with 4 or 5 fresh, ripe summer tomatoes and seed them while you cut them into chunks. Put them in the food processor with a cup of peeled, cubed English cucumber, 1/2 chopped green pepper and 1/4 Vidalia onion. Process for a few seconds, then add 3 Tbs. olive oil, 1/4 cup lime juice, 1/2 tsp. sea salt, a couple of grinds of black pepper and-- drum roll-- 1 Tbs. fresh horseradish! Process again to the smoothness you like and enjoy!
